Sicilian immigrants stacking mortadella, capicola, provolone on sesame bread, then drowning it in olive salad. That olive salad—briny, buttery, savoury—is what makes the sandwich legendary. We turned it into a sauce.


Fermented cayenne meets Castelvetrano olives from Sicily(buttery, fruity, the only olive worth using), capers, roasted red peppers, za'atar, toasted sesame. Red wine vinegar cuts through the richness. The result: umami depth with just enough heat to remind you it's Fury.
