Chipotle
Chipotle is one of Mexico's oldest preservation techniques—jalapeños smoke-dried for days over mesquite until the water leaves and something deeper takes its place. The Aztecs were doing this long before it had a name. That transformation—fresh pepper becoming something smoky, complex, almost meaty—is what makes chipotle irreplaceable.
