Spicy Fleur De Sel
Fleur de sel—"flower of salt"—forms only in the right conditions. Wind, sun, shallow water, precise timing. Harvesters skim the delicate crystals from the surface by hand before they sink. It's one of the oldest harvesting traditions in the world, unchanged for centuries.
We infused it with scotch bonnet.
Two ingredients. Hand-harvested sea salt. Scotch bonnet peppers. The crystals carry a natural mineral complexity—oceanic, faintly sweet—that table salt never achieves. The scotch bonnet adds Caribbean heat at the finish. Use it last, not first. Finishing salt doesn't cook. It lands.
