

Hot sauce Scoville scale explained
The Scoville(SHU) scale measures pepper heat based on capsaicin concentration. Mild jalapeños range from 2 500–8 000 SHU; habaneros 100 000–350 000; ghost peppers 1 million; and Carolina Reapers exceed 2 million. Scoville ratings however should be noted with a few caveats; scoville ratings for peppers are generally the highest rating recorded and don't reflect every pepper.
Scoville ratings can vary widely on a pepper based on variable factors including climate, soil health, ripeness etc. As such while a Carolina Reaper for example may come in at over 2 million SHU on paper, that doesn't mean that the majority aren't in fact 1 million or even less potentially. These are natural products and every variable impacts those ratings. Determining the scoville rating of a hot sauce is an expense process that requires lab testing. While it may be helpful to determine a range, every batch would vary as again, these are natural products with natural variables. For this reason most makers don't measure scoville as it's largely a useless metric.
