A fresh take on an old classic. Though Mexican, we first discovered the magic of Al-Pastor while travelling through Guanacaste, Costa Rica. Our recipe boasts charred Costa Rican pineapples, as well as Costa Rican achiote, perfectly complimented by Mexico’s famous smoked ancho, chipotle and habanero peppers, and fermented cayenne. We round out the flavor explosion with toasted Mexican spices, Mexican oregano, orange zest and garlic. This one is extra special.
